Preheat oven to 375 degrees. Oil a 12×8 inch baking dish.
Cook orzo to al dente, following package instructions. Drain and transfer to a large bowl; set aside.
In a heavy-bottom Dutch oven, cook the bacon over medium heat until browned, approximately 8 minutes. Add the leeks and cook until tender; an additional 8 minutes. Add the leek/bacon mixture to the orzo, leaving 1 tablespoon of fat in the Dutch oven. Add the spinach to the Dutch oven, cooking until just wilted; transfer to colander and press out excess liquid. Add the spinach to the orzo. Fold in the feta and season with salt and pepper.
In a small bowl, whisk eggs, yogurt, milk, salt, and pepper together. Gently add to the orzo mixture until combined. Scrape the mixture into the prepared baking dish; sprinkle top with lemon zest and freshly ground pepper. Bake for 45 minutes, or until the eggs are set and top is golden brown. Let stand for 10 minutes before cutting and serving.
