This salsa is easy, fresh, and flavorful. Once you’ve had it, you will never want store bought again. You can substitute Roma or vine tomatoes with tomatillos for a yummy salsa verde. Serve with chips and a side of margarita! Happy Cinco de Mayo!
Preheat oven to 350. Cut stem area off tomatoes. Place tomatoes, jalapeño, onion, and garlic on cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper—gently toss. Cook for one hour or until vegetables have blistering on the skin. Let cool.
Place all in a food processor; blend until smooth. Add cilantro; pulse for 10 seconds. Add lime juice and salt and pepper to taste. Pulse again. Enjoy!
Salsa can stay in refrigerator a few days or the freezer for 2 months.
